Super Moist Apple Cake
2 cups whole wheat pastry flour
1/2 cup turbinado
1 tsp baking soda
Cinnamon or nutmeg (optional)
3/4 cup apple juice
1 tsp vanilla extract
2 cups finely chopped apples
1/2 cup raisins or walnuts
Spritzed oil
Combine dry ingredients in a large bowl. Add juice and vanilla, stirring until dry mixture is just moistened. Fold in apples and raisins or walnuts. Spritz an 8 × 4-inch loaf pan with oil. Spread mixture evenly in pan and bake at 325℉ for 50 minutes. Remove bread from oven and let stand for 10 minutes in pan. Invert onto a wire rack or serving board and slice once completely cool.
