Chicken Sesame and Spinach Pasta Salad from New Life Hiking Spa
6 oz dry fusilli or rotini pasta
1/2 cup sesame seeds
1/2 cup light sesame or extra virgin olive oil
1/3 cup wine vinegar
1/3 cup soy sauce
2 tbsp sugar
1/4 tsp pepper
3 cups cooked, shredded chicken
1/2 cup finely chopped parsley
1/2 cup thinly sliced green onion
8 cups (2 bunches) lightly packed fresh spinach, torn into pieces
Boil pasta, drain, and set aside. Heat 1/4 cup oil in a frying pan and cook sesame seeds, stirring until golden. Cool. Stir in remaining oil, vinegar, soy sauce, sugar, and pepper. Pour over cooked pasta, adding chicken, and toss lightly. Cover and chill for at least 2 hours or overnight. To serve, add parsley, onions, and spinach. Toss gently.
